No-bake Energy Balls

Easy to knock together, these energy balls taste great and keep hunger at bay

Makes 16 energy balls

Ingredients:

  • 150 g stoned dates
  • 150 g raisins
  • 3 tbsp water
  • 20 g sunflower seeds
  • 20 g pumpkin seeds
  • 40 g almonds
  • 40 g pecan
  • 50 g high percentage dark chocolate
  • 30 g desiccated coconut

Not much in the way of method. Blitz together the dates, raisins and water in a food processor. Make sure your food processor is up to it and avoid using a hand blender (I know this from painful experience). You can always chop them by hand until they form a sticky mess.

Chop the nuts and chocolate, and add to the raisin and date mixture along with the seeds. Shape into walnut sized balls and roll in the desiccated coconut.
